I googled "uninstalling cereproc voices" and got their FAQ page, with  
these instructions:

CereProc voices installed on Macs can be uninstalled by going to  
System Preferences/CereProc Voices, clicking the voice to uninstall  
and then clicking the Uninstall button.

I probably won't uninstall this voice right away -- I got the Cereproc  
Heather voice, and rather like the accent.  I don't think it  
mispronounces words particularly, as Yuma noted.  It's probably just  
the Edinburgh accent.  It was useful to find out that others found the  
voice unstable with VoiceOver, since at one point VoiceOver stopped  
speaking entirely for me (as well as some problems with performance  
using the voice), and I had to restart everything.  I wasn't sure  
whether it was the voice or another related trial software that I'd  
installed called Claroread for Mac.  There were similar VoiceOver  
performance issues with the Cepstral voices early on in Tiger, so the  
feedback from you, Nicolai, and others will probably help. I notice  
that the FAQ page also gives a link for reporting bugs in the voices:

I've never had a problem with the InfoVox iVox voices.

In most cases simply moving the application bundle to the trash is  
sufficient to uninstall the app.  There may also be a small plist  
(property list) file for the application in the Library/Preferences  
folder for your user account, or in the system's /Library/Preferences  
folder, that keeps track of the preferences you've set up.  The few  
apps that actually need uninstallers will come with uninstallers.

Again, googling about uninstalling Open Office provided the  
information that you can just move this to the trash:

To uninstall applications on a Mac just drag them to trash. OO.o also  
has a user profile you should delete. It is located at:
/Users/'your user name'/Library/Application Support/OpenOffice.org/2
