If you go into System Preferences > Network, choose the action menu, and “Set 
Service Order …”, and make sure that Ethernet is in the table above Wi-Fi, then 
you don’t need to do anything to switch; connect and disconnect as you like, 
and as long as there is no session in progress, the selection of addresses 
always favours whichever interface has priority.  I do this all the time when 
switching between Thunderbolt, Ethernet and Wi-Fi and it works pretty reliably, 
so long as you make sure only to connect to whatever network resources you want 
after you’re connected to the cable and not before.
