Let’s see.  If you just want a portion of the text, do a Command-A to select 
all, then open TextEdit and paste.  Edit to taste.  Now save the file, in a 
usable format (I recommend plain text, for maximum compatibility).  You could 
press Command-S, and because it’s Untitled, you should be asked for the 
filename.

Or, to save the entire web page as a file, choose File, Save As in Safari.  Now 
you can specify that you want just the web page HTML, or a web archive; 
experiment with both.  Put the files somewhere you can find them.  When you 
open the files in Finder, Safari will open up with the web page contents, just 
as they were when you saved.  Hopefully you don’t need an entire archive, but 
if you find that the HTML alone will not do it, then try again to save an 
archive.  You can also open the HTML files in TextEdit directly, and although 
the formatting will probably be very garbled, you should at least end up with 
the text of the page which you’ve preserved.  Once you have the text, the 
world’s your oyster and you can manage it however you want.
