I've read online that the new Binge feature actually re-encodes the video to
a lower rate. I wonder how TMobile can do that without breaking the app in
question's expection to play back a certain bitrate? Wouldn't all the
protection in use with things like Netflix be broken by the carriers'
transcoding of the stream?

AT&T is your least cost effective option these days. They also throttle
heavily and do lots of manipulation of the data stream. All carriers do
this to some degree or another on the wireless side to be clear but AT&T is
known for being heavy handed.

Asus routers support mobile broadband modems out of the box. You will
have to do some reconfiguring in the firmware to make it work, but it
will be much better than trying to use the phone as a hotspot because it
does not have the limitations imposed by Apple and allows you to connect
wired devices to the network.

Apple TV and Time Capsule can both function as wireless clients. Just
join them to your new network. Or, as you said, you could just
peer-to-peer stream to Apple TV, and continue to use AirPort for
providing a non-connected Wi-Fi and Ethernet network (you’ll have to
disable the warnings). While joined to a wireless network, AirPort’s
Ethernet ports are useless.
