Hello Jim, I almost didn’t read your message because the subject line did not reference Pages.
If your needs aren’t very urgent, my husband and I have a book coming out fairly soon on Pages with VoiceOver and it will answer all your questions. There are problems currently with placeholder text and VoiceOver. Just using the right or left arrows should highlight placeholder text but this is not working properly with the current version of Pages and El Capitan. You need to turn VoiceOver off before selecting the placeholder text and then turn VoiceOver back on again. Obviously, I’ve reported this to Apple Accessibility.
