Wow, it was difficult for me to find the place in the table formatter to adjust column and width size. You can set a hot spot for this while working on adjusting the table. Also the contextual menu does have an option to auto-size based on the current selection, The third option is that Applescript for Numbers appears to have a property for the column object for width So if you need to have access to the width on a regular basis, you could associate an applescript command to prompt you with a value.
