There is some coverage of Numbers in the book Mastering the Macintosh with VoiceOver by Tim Sniffen. It is available in iBooks. I just got a Mac and haven’t used Numbers much yet, but there was a Numbers update which mentioned VoiceOver improvements in the recent release notes. The book focuses on using the trackpad over learning a lot of keyboard shortcuts, but should give you good overview to start from even if you prefer keyboard commands.
