First, go to the top of a blank document to make these changes, or select all in a document that already has text, then go to the top.
For line spacing, stop interacting with the scroll area that holds the text field and vo-left to the line spacing popup button. Choose your spacing from here. For the not, there's a font size combo box, but I can't get it to work. Instead, hit cmd-t, vo-right to "size", and vo-down. You'll land on a text field where you can type the size. Once done, hit cmd-w to close the window. Note, however, that 12-point is usually the default. Finally, you can't set a default spacing. I'm not sure if that gets based on the last spacing you used, or if it always reverts to single-spaced for new documents. You can, however, change the default font for new documents. Hit cmd-comma, choose the "New Documents" tab, and find the font for the type (rich text or plain text).
