Either will handle VoiceOver just fine. Your biggest enhancement will come if you can switch to a solid state drive, which will make app launching, opening new windows, loading files, and other tasks a great deal faster.
If I could only pick one, it would depend on what I was planning to do. Run Windows virtually: ram. Encode videos: CPU. Do a *lot* at once: ram. get smoother overall performance: CPU. If possible, upgrade to 8GB of ram, then get the best processor you can with your budget.
