You want your keyboard layout to be in a standard greek style? If so, then you need to go to the international pane of system preferences.
In that window there is a input menu tab to select. Select this tab and pick the keyboard layouts you prefer. You will then be able to select a keyboard style from the menu bar, and I believe there is also the ability to select a shortcut key for switching keyboard layout.
