I am not on my Mac at the moment but from memory you need to select a an option that says something like Show in Finder and rename it from there.

Hi Simon,

Just go to the item you want to remove and open the shortcut menu (VO-Shift-M) and choose remove from dock. I think there's a shortcut key for this, but can't remember what it is.
