If there is a menu item that you use frequently that does not have a keyboard shortcut you can easily assign one in system preferences, in the shortcuts area. You do need to spell the shortcut exactly like it is in the menu in order for it to work, but this should be fairly easy with VoiceOVer.
1. Go to the menu you want a shortcut for. 2. Hit vo-shift-C to get the last phrase spoken into the clipboard. 3. Escape out of the menu 4. Go to system preferences / Keyboard / shortcuts 5. Find applications in the first table 6. add a new shortcut and paste the text you cut in earlier steps. 7. Assign a shortcut to cause that function to occur. There are also places in the system settings to assign keyboard shortcuts to services that show up in the contextual menu.
