Remy, in order to get VoiceOver to automatically read the title of the columns 
that you are arrowing through, you must first set the number of "header 
rose"for the table, say for example set header rose to two. Then you have to 
place the actual name of the columns in row One or two. These "Header Rose", 
are exactly what they sound like. They contain the header information for the 
columns. You can also set header columns at the left side of the table and 
place header information for the given rose as you arrow down and up through 
the table. Voiceover will read and automatically announce these header row and 
column titles as you arrow around through the spreadsheet. In my experience it 
works best when you use the VO plus arrow keys as sometimes the arrow keys 
alone do not seem to announce row and column title information. You set the 
number of header rows and columns in the tables menu. 

The number of header row and columns is very important, because if there are no 
header rows or columns, then any title information that you may have in the top 
rows or leftmost column's will be considered as data and not as header title 
information. So, be sure to check these settings in the numbers tables menu and 
ensure that your column and row title information falls within that set number 
of rows and columns. On your specific absinthe table, if you have the column 
title information in a row one, then you just need to set the header rows to 
one in the table settings and that will pick up the title information and 
treated as a header, not as data. 
Also, I believe there is a setting that must be set to on somewhere in 
voiceover utilities that says something to the effect of "automatically 
announce table row and column headers". Although I think it is set to on by 
default.
