Hi Matt, Yes, there is. Once you get to where you're presented with the folders list, all are checked. Voiceover won't announce them as such, but they are. To uncheck the folders you don't want to sync, press spacebar on them. Again, voiceover won't announce the state as unchecked, but once you press the button to update your settings, it should take.
