In the what were they thinking camp, Uber apparently was using iPhone unique information to fingerprint devices and also track phones even if the app was uninstalled. Uber has been having a whole host of security and privacy issues lately and this is just another, a really big one. Folks interested can read more here. Keep in mind, even if you hard reset your phone and removed everything Uber could still track you.
