Hi, Normally, you should be able to go to the Purchased tab within the AppStore and download previous versions of the Server app. The caveat here is that you must have purchased that app using the same Apple ID. You may not see it yet, but once you install Mountain Lion or Mavericks on to the MacBook, and log into the AppStore, that version of Server should still be available to you. Note that I use the word "should". That's my favourite word when helping people with tech sorts of things :).
