Have you played with Accessibility Verifier? Not sure how it works with Java apps but for others it will scan the currently displayed UI for missing labels and the like so you can catch stuff without having to navigate through every element by hand. Assuming you have Xcode installed you can find it under /Developer/Applications/Utilities/Accessibility Tools.
