Hello Michael, The phenomenon you've described appears to be a function of Mac OS/iOS, only.
When I contribute to a thread on my Mac, I do not see my reply in the thread. However, when I contribute from my Windows PC using Outlook, I do see the reply in the thread, even when viewing the thread from my Mac. A similar, but slightly difference thing happens in iOS. I believe the solution is to, from within the Mac Mail settings, select to copy yourself. Try that change, and let us know what happens.
