Hello Gary, I am, by no means, versed in these kinds of things; however, it would seem to me that it would be beneficial to remember that the Mac Mail application is merely a client.
Therefore, were I you, I would focus my efforts on modifying core folder structure on the server. For all intent and purposes, this access is granted via a web browser. So, for example, when I need to make major changes to my Google account, I use a web browser and login and edit my preferences'. Then, when next I open my mail client, be it Outlook or Apple Mail, the changes are immediately reflected via the iMap protocol.
