Hi, Sorry, I'm not aware of any documentation. Although, that doesn't mean that there isn't any out there, I've just never looked that hard. The Docs app from Google for iOS sort of makes it so that you're not really using the browser based thing, but you are connected to it and collaborating with everyone. There are some accessibility settings you can manipulate directly in the document if needed. Actually, I'm in the middle of a collaboration all day today where we are working within a Google Sheet. I accidentally left my bluetooth keyboard at my other school, so am having to work in Safari. They must have made some improvements, as I'm working quite easily in the shared sheet. I primarily use the arrow keys to move back and forth between cells and the Item Chooser to select other sheets within the main one. It's surprisingly good today. Makes me wonder if the Docs experience has improved within Safari as well. I'll try to look tonight or tomorrow when I'm not in the middle of this collaboration.

Do you know of any documentation anywhere that would relate to the Google docs app on iOS platform? I don't think I need to learn a lot. I just need to be able to read the document, see what people have contributed, and possibly actually be able to contribute something of my own. I have never used any web based documentation collaboration stuff before, I'm not thrilled about having to do it now, but such is life.
