You can choose what syncs with Apple Watch in the Watch app on your phone, under the Music item in the My Watch tab. Series 3 can play any Apple Music so long as you're on wifi (or cellular, if your Watch can do that), but I'm on Series 2 so can't play with that ability. I don't know about the Beats, but I'd guess yes, since they use the same primary chip as AirPods. As with Series 3, though, I don't have them to say for sure.
