Hi, WiFi calling shouldn't have anything to do with it, but it was a good thing to check since technical issues aren't always logical. For me the best results were realized when I turned off the "Auto Detect In Call" feature. This is the feature that swaps between the speaker phone and regular earpiece audio automatically when you pull the iPhone away from your ear. By disabling this feature, the only time I've experienced delays is when I use Siri to invoke a call. To disable this feature, go to Settings, General, Accessibility, VoiceOver, Audio and you'll see it as one of the configurable options there.
