Hi, Yes, in Preview, you are able to sign with your finger directly on the Trackpad. The difficulty arises in the location of the signature. I've always used sighted assistance to ensure that the signature is properly placed, as I'm not sure that it would automatically be able to do that.

I don’t remember exactly how it works, but my El Capitan system does have Tools->Annotate->Signatures->manage Signatures menu item.
