A trick I use for this eliminates the need for me to type the menu item at all. Go to the menu and navigate to the item for which you want to make a shortcut. As soon as Vo speaks the item, press vo-shift-c to copy the last spoken phrase to your clipboard. This will place the text of the item on your clipboard. When you make your shortcut, simply cmd-v to paste that text into the place where you'd normally type it.
