You can disable touch ID authentication by either using an unrecognized finger three times, or pressing your power button five times quickly. The latter will bring up a screen to call the emergency services, but you don't have to make that call, as it won't happen automatically. Either way, Touch ID will fail until you manually type your passcode, after which it will work again until the next time you disable it.
