There is the free open source skim pdf app., I prefer it to preview and it is 
faster and smaller.

It is designed for academic literature and might handle tables etc. better.  It 
seems to me to render text formats with fewer quirks.

Using cmd + a to choose all text, then cmd + c to copy it to the clipboard, 
then the entire text cann be pasted into a plain text file for
easy manipulation.
