Welcome to the 8 Plus.  It is truly a fine device.

As for your two questions:

1.
It may take some time but, eventually all of the compatible apps that were 
stored in your iCloud backup will be downloaded to your new device.  If not, 
you can always manually re-download them.

2.
Generally speaking, one must restore one’s device from an iTunes encrypted 
backup, located on a computer, in order to avoid having to re-enter passwords, 
on an app-by-app basis.  There may be some exceptions, however, I know of none.

This is just my opinion, of course.
