Well, I believe this used to be able to be done in with 
additional speech verbosity options
If you open up this area and pick the Heading row, you can stop VoiceOver from 
speaking the text associated with the heading (name) in the custom verbosity 
pull down. But it appears that "Description" can not be disabled and is what is 
being read by  VoiceOver as "Heading Level 2". I believe in older versions 
there were more ways to adjust items in this table, though I never really 
tested to see if adjusting the order or checkboxes actually changed what was 
spoken.

I suppose you could always paste the body of the message into a plain text 
editing field.
