I went to Messages on the Mac but am not seeing some texts even
though I have text forwarding set for all my email accounts. I am not
syncing messages to iCloud. I wanted to print one out.

Yes, as mentioned, it is possible to print from the iPhone, but I
would venture to say that the screen shot method is much less accurate
as you would need to ensure that you're not missing any parts of the
conversation.
