Then after the files were installed, I opened the Audio Book Binder app (previously downloaded) and pointed to the folder with the MP3 files, and it was converted to an audio book and placed in my iTunes library. A bit of poking and struggling, but I got it to work. This whole Mac experience is becoming just a slight bit less confusing as I keep poking at it.
