Carbon Copy Cloner shines in this regard. CCC was not only ready for Catalina but it was ready for Mojave last year.

CCC creates a hidden read-only volume. I have not encountered any issues with this.

So for example if your Office 365 files are owned by the MDM / work license, they will be on a separate partition with its own encryption key that is shared between you and the company. If the company decides to disable your access they can only remove the MDM controlled disk partition and licenses not your personal files. I am probably not describing all this very well, but it is designed to allow a computer to have both  corporate and personal security to co-exist on a single machine.
