Hi,

i just tested this and it stuck for me.  I did the following:

• open the Home app on iPhone.
• Double-tap the Edit button.
• Double-tap the HomePod.
• Swipe to find the room that it's assigned to, just after the name field.  
Double-tap on this button.
• Swipe to locate the picker and flick up/down until you find the desired room.
• Swipe left to the Close button and double-tap it.
• Double-tap on the Done button.

That should do it.  If this is what you've been doing, then you're app is being 
stupid.  Restart the device and restart the HomePod or HomePods to see if they 
behave better after the restart.
