Hi, When I did this exact thing a couple weeks ago, updating from a 7 to the SE, it couldn't have been easier. The new phone asked if I wanted to restore from another phone and asked to enter a code that showed up on the phone on the device I was restoring from. Once I entered that it walked me through setting up things like my touch ID, Apple pay and maybe a couple things then told me to leave both phones unlocked and near each other until the restore was complete. That process took between 15 minutes and half an hour. The entire process was completely accessible and probably the easiest iPhone setup experience I've ever had.
