If you open Pages Preferences, under the General tab,, the first item allows
you to choose whether when opening a new document, you want to use the Template
Chooser or use the default template.

Hello Anne,

it kind of worked, but not as I expected. Whenever I launch pages, I press
command plus n, but instead of opening my custom template, the template chooser
shows up, so I press escape and press command plus n again, and finally pages
opens my custom template. I don't know why...

Best,
