Hi mark, I'm sitting here at my windows machine currently but from memory in outlook for mac there is not an option to bulk download your attachments I thought / think there is an option to do this in mac mail which should also work fine now with exchange if you are running an up to date mac os and mac mail with it.
Exchange interaction with mac mail is dam good now Otherwise I'm not sure I understand what it is you're trying to do.
