Eric,
YOu can probably automate at least 80% of this with apple script. 
I haven’t worked with Mail’s AppleScript interface in 1/2 dozen years, but one 
can easily get date sent sender etc.  
In current Macintoshes, you can also use JavaScript to interface with the Apple 
automation platform. 
If you want to do this for 100’s of messages, it would certainly be worth 
automating. Hmm, I wonder if default folder X or one of the keyboard macro 
programs could do it  also.
