I have never used CTRL + Backspace to delete words, but find that using Option + Backspace will do this. I have always used Option + Left/Right arrow keys to navigate by single words, and find that this still works, though navigation behavior is not the same in all applications. I am running macOS Catalina 10.15.7, with all current updates installed.
