Hello Daniel, As you so rightly suggest, VoiceOver selects its language according to the HTML language tag. Where no language tag is present, it uses the language you've set it to. There's nothing you can do to change the language on the fly, but you can change the language in Settings (assuming it works like the iPhone).
If your iPod Touch is normally set to Danish and this recipe app is reading as English, then the developer has made a mistake in the coding and should be contacted to make the appropriate change.
