Actually, you can add people to an existing iMessage conversation as follows:
1.  Open the existing conversation, and double tap on the list of recipients at 
the top of the message.
2.  Select the Info button that appears below the list of recipients.
3.  Swipe past the list of recipients, and you should find an Add Contacts 
button.
4.  Type in the names of the contacts you would like to add to the 
conversation, and then select the Done button in the upper right corner.
5.  Once back in the Conversation Details screen, select the Done button in the 
upper right corner of this screen to return to the iMessage Conversation.

I’m not sure if this will work for conversations that contain one or more 
non-iMessage contacts, so you will have to investigate for yourself.
