The command-return will do this you are interacting with text. Unfortunately,
at least with older MacOS, one could not bridge a span of text using this.
1. Start interacting until VoiceOver says interact with text.
2. Move to start location.
3. press VO-return. VO says select.
4. Move to end location using VO Navigation.
5. Press VO return again VO says stop selecting.
If you are lucky this will have selected the text you wanted. I find this
works a little more often than the VO-comma /VO-period method of drag and drop.
Other possibilities.
shift-command-right select to end of line
shift-down select next line
shift-command-left select to beginning of line.
shift option left/right select word.
These above commands even work in web pages once you get a initial bit of
content selected.
There has also been discussion on this list in past times of the Emacs style
kill buffer that is built into the standard MacOS textedit widget (used by mail
and textedit and several other programs).
This text edit functionality was ported over from the NeXT computers and I
don't think it has changed much in 20 years.
