Okay, I’m stumped.

When I had both Mojave and Catalina on my hard drive as two APFS volumes, I was 
able to select either as a startup in System Preferences.

Since I tried to update to Big Sur over Catalina, and even after doing a clean 
install of Monterey on a new clean APFS volume, I can no longer see anything 
but Mojave in the System Preferences Startup. Once I’m back in Mojave, I can’t 
switch over to Big Sur or Monterey.

Also, there’s a volume called “Update” in place of the volume that was supposed 
to be labeled “Monterey”. Before I remove that volume and start all over again, 
do any of you have some idea what’s going on?
