If all you want to do is disable the account when you are not working, then that is the simplest solution. Disabling an email account using Internet Accounts, is a more long-term solution, because that method completely removes the account from your Mail app. Then, when you want to use the account again, you go back to Internet Accounts, and check the box to enable the account again. I use this method for accounts that I don't use frequently. For an account that you simply want to disable in the evenings when you are not working, then disabling the account within the Mail app is definitely the simplest, and easiest way to go.
