There are several ways to do this.
1. Time Machine this is the built in backup strategy that Apple provides. When
you first insert a new hard disk, MacOS will ask you if you want to use it for
Time Machine, I am fairly sure all you have to do is click yes and it will
start backing up.
2. Carbon Copy Cloaner is an independent package that has various options for
making copies of folders or disks. I have never used it, but it is supposed to
be faster than using built in tools like unix cp, or the finder.
3. Super Duper this is essentially a disk copying software package. It does
have the ability to do incremental backups if you upgrade to the non-free
version.
Joe Kissel has written a Take Control book to help people create a backup
strategy that is effective for their needs. If you are a book share user it
should be available there, or you can purchase it from Take
Control Books.
