Apple Cash is an option for a payment method in ApplePay.
You need to setup your bank debit or credit card as a method of payment, then 
set one of those as your default method of payment for ApplePay.
No meed to turn off Apple Cash if you have another method of payment selected 
as your default.

Express Transit is something that is a separate type of payment.
For example, Express Transit, once setup, can be used on the New York City 
subway system.  It allows you to just hold your iPhone or Apple Watch up to the 
turnstile reader, without pressing the side-button twice, as is required on 
regular ApplePay payments.
