I don't think Amazon specifically supports Sign In with Apple, but yes, many 
services do. You'll know when you run into one because there will be a list of 
single sign-on options (Google, Facebook, Twitter, etc) and Apple will be one 
of those. Looking at my settings I see that some of them have alternative means 
of logging in as well, like by email, but most were signups directly in an app. 
For instance Airalo (an app for travel ESIMs) just uses Apple as the sole means 
of identifying my account on the service, and If I want to add a password I 
will have to use my Apple relay address to sign in, for instance on the web.

And that's another thing: Sign In with Apple also gives you an optional email 
relay address, just like Hide My Email; in fact, if you look at your Hide My 
Email settings, you'll see all the Apple sign-ins where you elect to use this 
feature.

So yes, it's just Facebook login for apps, basically. It's a thing and it's 
deeply integrated in a very Appley way and it works. Have fun.
