That’s interesting. I am running macOS 15.2, Sequoia, and when I go to Mail Settings > Viewing, and turn off "Use Smart Addresses", the senders email address is displayed in the message header. Perhaps after turning off Use Smart Addresses, you should close, and then reopen the Mail app, and see if the sender’s full address is displayed in the message header.
Alternatively, when in the message header, try interacting with the sender’s name, and then opening the Shortcut menu using VO + Shift + M, and see if the address info is available there.
