Hi, There is a setting in the Mail app on your Mac for this... Take a look in the preferences by selecting Compose in the Toolbar, and somewhere down in the window you will find "Create Notes and To Dos in..." and a pop-up to select among your accounts. The most bottom item in the pup-up is "On My Mac". If you choose this one, your notes will only appear in the NOtes folder.
