Hey Pete, The iOS app is fine, but you need to learn how to make the incrementing more granular. However, if you have a macOS computer, I would recommend audacity. It has several features that make what you want to do much simpler. For example, you can go into the menus And you can select one of the options that will allow you to take out long pauses within the audio file.
