If you just want to make a complete backup, you could of course use Time 
Machine to back up to an external drive.

But if you want to gather specific things from the Mac, then you locate them in 
your file system, typically under your home folder (Command-Shift-H in Finder). 
Copy the folders you want and paste them where you want them—external drive, 
iCloud Drive, Dropbox, whatever.
