You can't do that within the text messaging app. However, if you go to the message you want to forward and flick up or down until you hear copy. You can then do a one finger double tap and copy the desired message to your iPhones clipboard. Then you can go to the Mail app and start a new Mail message and then paste the text that you copied from your message into the new mail message.
